k  For the falafel  k

Ingredients (for 18-20)

1kg cooked beetroot in 3cm squares

6 tomatoes chopped very finely in 3mm dice

1 red onion, chopped very finely in 3mm dice

1 tablespoon sumac

2 tablespoon fresh chopped dill

7 tablespoon olive oil

2 tablespoon poppy seed

Sea salt, to taste

Method

Place all ingredients into a bowl and mix (will keep for 3 days)
