My mother, she was taught by my Dad’s father and I still call her for tips and recipes today.

Honey & Co – great family run Middle Eastern café.

Kerri Chandler really surprised me at the Native instruments cook off at ADE, he made some incredible meat kebabs.

Your guilty pleasure food. You know you shouldn’t but you always do…

For me it’s pizza, I can eat it day or night, sober or merry –  always stone bake to make me feel a little less guilty.

What is your signature dish

It’s my wife’s favorite and I’m forced to cook it 2-3 times a week, Spanish dish of chorizo cooked with beans and various herbs and spices in tomato sauce.

If you could have a master-class with a celebrity chef, who’d you pick and why?

Keith Floyd would have been great, I could have a few drinks before we cook and enough not to worry too much about what the food would be like.

The most you have ever spent on a meal

No comment – more than I’d like to remember!

A dish you have yet to master…

Paella – I’m close. In my last attempt the chicken wasn’t cooked properly and the rice was hard – aside from the chicken and rice, it was lovely.

Black pudding – I still can’t get my head around eating pigs blood in an intestine. No thank you.

Always the same, ham – mushrooms – sweetcorn.

My favourite 3 restaurants on the island…

Sa Calleta on the road between San Josep and Eivissa town.

Rincon De Pepe in the west end San Antonio – don’t be put off by that!

And Can Pilot in San Raphael (below).

Your favourite Ibiza dish

Pardon peppers and any vegetable or meat grown on the island cooked with olive oil and fresh Ibiza salt.

The best sunset spot for a cold drink…

Has to be Cafe del Mar, nothing quite beats it.

The perfect 24 hours in Ibiza would be…

Early start, breakfast at Atzaro before heading to Calla Saladetta for relaxing and snorkeling and lunch. Back home for a quick nap, shower and change before heading off to dinner at one of the restaurants above. This is where it can change for some people. I’d then go home for a movie on the sofa before a relatively early night – this can be replaced for the classic line, shall we go to ‘x’ for one drink? If you take option 2 and aren’t a spring chicken like me, you may need a little longer than 24 hours to recover. Delete as applicable.
