Francisco Allendes
The Chilean superstar unwraps his vegan delights…
A track you love to hear on a sunny morning…
Shakti – Mind Ecology (I listen to it most mornings actually).
Your perfect breakfast would be…
It really depends on the weather. During summer time I would usually have bananas, peanut butter and soy milk, whilst in the winter time I prefer to have porridge style oats with slight variations every day.
The most unusual thing I have ever eaten…
I don’t really remember eating that many unusual things. I once ate some weird duck in China and I hated it, but I can’t say it was unusual. Maybe now because I am vegan some people would think all my food is unusual.
The dish that reminds me of my childhood…
Spaghetti salad with olives, my mother made this every week!
Who taught you to cook?
If someone taught me then they did a horrible job since I am a disaster at cooking (haha). I can make simple classic dishes, but normally the nutrition in my house is looked after by my wife.
Your favourite 3 restaurants in your home city…
These three are all in Santiago, Chile and are amazing:
Vegan Bunker Cafe
El Huerto
Cafe Sapiens
Some of the other amazing restaurants from around the world you love…
Govinda in Lima, Peru
Sabores Naturales, San Juan, Ibiza
Vegan Junk Food Bar, Amsterdam
Punto G, Ibiza
Dolce Vite, Ibiza
A DJ or musician that has surprised you with their cooking skills at home/their home… what did they cook?
Josh Wink always has great food in his house – everything is always organic and fresh. Once he cooked an amazing tempeh that blew my mind!
Your guilty pleasure food. You know you shouldn’t but you always do…
Again – peanut butter, it’s addictive! I mean it’s super healthy but the amounts that I eat it I’m not so sure…
What is your signature dish?
Vegan Coconut Curry with Tofu
If you could have a master-class with a celebrity chef, who’d you pick and why?
I really don’t know. I have seen some very big chefs dislike vegetarians and vegans and I’m not yet that well informed on superstar vegan chefs.
Dead or alive – 3 famous people you would invite around for dinner…
Frank Zappa, David Gilmour and Javier Cansado.
A dish you have yet to master…
Rolling Sushi.
Your favourite pizza topping…
Marinara Pizza with Mushroom and Olives.
Your biggest ever food mistake…
Some homemade muesli was supposed to have a tiny spoon of salt but instead I put a large wooden spoon of salt. The flavour was very challenging to say the least.
A dish you just cannot eat…
I was never able to eat Callos a la Madrileña (a tripe dish traditional to Madrid)
You get in from the club pissed, dive in the fridge and usually come out with…?
Bananas and peanut butter!!
The most expensive meal you have ever had?
I had a very expensive pasta with garlic in Sao Paolo, it was like 50 euro just for that dish and I stank of garlic for the rest of the tour.
Ibiza
My favourite restaurants on the island…
Sabores Naturales
Es Tap Nou
Mitch’s Bar
The best sunset spot for a cold drink…
I love the Ocean Drive Rooftop in Talamanca! You can see right across the port to Ibiza town.
A record that always reminds you of Ibiza?
Depeche Mode – The Sinner in Me (Ricardo Villalobos Remix)
Your favourite Ibiza dish?
I’m still looking for a typical vegan Ibiza dish…when I find it I will tell you!
The perfect 24 hours in Ibiza would be…
Waking up without an alarm clock, having some nice breakfast, taking the car and going to explore the island with my wife and child for the whole day with a nice picnic bag…
…and then coming back at night tired from all the fun we’ve had to dive straight back into bed!
