The Amnesia resident DJ getting all mixed up in the kitchen…
A track you love to hear on a sunny morning…
Sasha Feat. Poliça – Out of Time (Patrice Bäumel Remix)
Your perfect breakfast would be…
The one they give you in those 5 star hotels where you can choose anything you feel like on that morning. A fresh French Croissant is a must, if it’s not on the menu, it’s not perfect!!
The most unusual thing I have ever eaten.
The larvae of ants, it’s like the Mexican caviar and it’s called ‘escamoles’, trust me!!! It tastes great but you need to go to a fine restaurant.
The dish that reminds me of my childhood
Black beans with rice, it’s a typical Cuban dish which my grand mother from Cuba was always cooking for me when she was visiting.
Who taught you to cook?
Thermomix. That’s the trick, I doo cook but this incredible machine does nearly everything for me and tastes great…you can call me for orders hahaha!! I’m joking, but when you have to cook for a girl it helps! Just hide it when she arrives home.
Your favourite 3 restaurants in your home city…
I’m a big fan of Spanish, Japanese and Mexican food so I would say Paco Meralgo for Spanish, Shunka for Japanese and Cantina Mexico, all in Barcelona.
5 other restaurants from around the world you love…
I just arrived from Peru and I found this restaurant in Lima which is called “Maido”, it’s amazing (below). It’s one of the top 10 restaurant in the world so it’s quite expensive but you must try at least once. Near Bologna you have this small restaurant called “Osteria del Mirasole”, just go and enjoy Italian food at its maximum level…and it’s not very expensive. In Sao Paolo you have “Figueira Rubaiyat” which is a very beautiful restaurant with a really old tree in the middle of the place with great food. Another one could be in Valencia, it’s called “Casa Montana” and the tapas is great!! Last one I would recommend “Meradelima Restaurant” in Jakarta which has a great selection of Peranakan food.
A DJ or musician that has surprised you with their cooking skills at home/their home…what did they cook
Paco Osuna is good at cooking Paella, he was living in Valencia for some years so he knows what he’s doing!!!
Your guilty pleasure food. You know you shouldn’t but you always do…
Ice Cream from Haagen Dazs, if I see the product I buy it immediately!
What is your signature dish?
I don’t have one, maybe Gazpacho with strawberries.
If you could have a master-class with a celebrity chef, who’d you pick and why?
Joan Roca as he has been a top master class chef for sooooo many years without using TV or promotion of any kind, only with high quality food and one of the best restaurant in the world.
Dead or alive – 3 famous people you would invite around for dinner…
Elvis Presley, Hitler and God. Lets see how the dinner goes…hahahaha
A dish you have yet to master…
Nearly all! There is always something to learn or to do better when cooking.
Your favourite pizza topping
Spicy chorizo.
Your biggest ever food mistake
One day I was cooking too fast and when the dish was ready I added sugar instead of salt and had to throw it all away.
A dish you just cannot eat
I think I can eat everything, maybe something very exotic would be difficult, like insects but all normal food.
You get in from the club pissed, dive in the fridge and usually come out with…?
A cold beer!!
The most expensive meal you have ever had?
It was in a restaurant in Japan, I misunderstood the menu and ended paying 320€ per person.
Ibiza…
My favourite restaurants on the island…
Cova Santa, near San Jose has a great selection of meat which I love, “Es Boldado” would be my option for fish!
The best sunset spot for a cold drink…
There are too many but I suppose I would go Salinas….
A record that always reminds you of Ibiza
All the tracks Sven Väth was playing some years ago at Cocoon…for example
“Diabla” from Funk D Void.
Your favourite Ibiza dish
Not sure…maybe the fideua, typical from Ibiza which is different from the one of Cataluña because they use thick pasta instead of the thin one.
