Mr C
If you could have a masterclass with any master chef…who would it be and why?
Gordon Ramsey because he’s a cunt.
Your favourite record you put on in the morning to start the day with a smile…
Lovely Day by Bill Withers. How can that not put a smile on anyone’s face first thing in the morning?
Your favourite restaurant in Ibiza and why?
Bambuddha Grove. Of course the food and cocktails are excellent, but also the atmosphere there is great and it’s always a pleasure to see John Moon.
Has a DJ ever cooked you food? If so, what?
Yes Sid Shanti cooked for me in Ibiza. He’s an amazing chef as well as knowing how to mix up some good tunes, but it was so long ago that I can’t remember what the dish was. Also my wife Xo Chic cooks for me all the time. Very simple but extremely healthy food. These Mexican chicks know how to look after their men.
The food that reminds you of your childhood?
Fish fingers and chips. Staple diet for the working class kids of the 70s.
Can you cook – what is your speciality dish?
I’m not a great cook but I do have a signature dish. My speciality dish is Sea Bass cooked Mediterranean style with baby corn, plum tomatoes and mange tout, all baked together in a sealed tin foil bag with an Alberiño white wine sauce with garlic, basil and olive oil. I’d serve that with creamy mashed potatoes. It’s simple but delicious.
The perfect Ibiza sunset tune…
Myself by BarBQ on Superfreq. It was an end of night classic at Superfreq at Undergound in Ibiza and always puts a smile on peoples faces.
Away from the club…the perfect 24 hours in Ibiza would be…
Lazing all day, having lunch and enjoying rose wine at Tropicana Beach Club. Then a siesta and then a fish dinner at La Sal on the Salinas road followed by a night at home cuddling wifey.
You have travelled all over the world, what is the most unusual food you have ever tried?
When I was a meat eater, I had a dish in Chengdu in China translated to crispy crispy. I was made from chickens knees that were first marinated to make the super soft mixed with duck’s tongues. This were flash fried in child oil as an appetiser. It sounds strange but it was delicious.
Your guilty pleasure food?
Fillet of Fish from Mickey D’s. I know, shoot me now.
Your favourite restaurants in the Los Angeles?
There’s a vegetarian restaurant near where I live in Echo Park called Elf that is to die for. I love Cafe Gratitude in Hollywood, which is a vegan restaurant. Sage, which is a vegan raw food restaurant, also in Echo Park.
And your favourite restaurant in the world?
Hechizo in Tulum. The food is simply divine. There never used to be a menu. The Chef would come out and explain the dishes, ask about allergies & cook accordingly. They now have a menu but the chef still comes out to ask about allergies and explain the way the food will be cooked. The wines are high end there too and you’re in Tulum, which as many now know is paradise.
What countries do you love returning to, to sample their cuisine?
- Mexico
- Italy
- Japan
- Thailand
- France
A dish you just cannot stomach?
Since I no longer eat meat, anything with meat in it.
Your tip for tune of the summer…
It’s a little early to say just now but I think my new tune Sweet Thing with Dance Spirit on Superfreq, which will be released at the end of May will be a summer hit.
The best airline food – if any!
It all sucks.
