Oliver Huntemann
A track you love to hear on a sunny morning…
On a Sunday morning after a gig I’d kill anyone who tries to switch on music. On a Sunday morning of a free weekend the icing on the cake is Bill Withers’ ‘Ain’t No Sunshine’. Unfortunately, in this case I have to battle with my little boy who prefers either Baby Shark or Rammstein.
Your perfect breakfast would be…
…served with local specialities on a private roof overlooking the rise of the hot-air balloons at first light in Cappadocia, Turkey along with my family. Been there, done that…
The most unusual thing I have ever eaten…
Breaded deep fried bull testicles in a local restaurant in the countryside of Slovenia where I was taken to by Umek was one of my most uncommon dishes I’ve had. With imaginative power it tasted like Wiener Schnitzel.
The dish that reminds me of my childhood
Fricassee of chicken made by my mom. Unmatched yet, pretty much as her legendary monkey cake, a chocolate sponge cake filled with whipped cream and slices of banana – still the favourite of all kids and grown-ups in the family.
Who taught you to cook?
The description on the back of the packet soups during my apprenticeship in the German navy made me curious for more. From there it was a long and hard way into the secrets of the kitchen but meanwhile I’m proud to say my fricassee of chicken is almost as good as my mom’s.
Your favourite 3 restaurants in your home city…
Holy Taco
I’m proud to say I’ve just opened a Taqueria and Bar in the heart of Hamburg alongside my wife and my Mexican business partner Paco. Holy Taco stands for the mystic and magic of Mexico and authentic Mexican food. There is no Sombreros and Sierra Tequila in Holy Taco but a wall of skulls, a wide range of original Tacos and Reserva de Familia – for those who know. Needless to say, that we offer the best and most authentic Tacos in town. www.holy-taco.de
Yaku
Buddy business! The restaurant of our Holy Taco chef Ernesto Camarillo offers exotic and outstanding Peruvian and Mexican fusion food.
The Table by Kevin Fehling
A incredible taste adventure, something like little explosions of flavours in the mouth with every bite. Kevin Fehling is Germany’s youngest 3 star chef.
3 other restaurants from around the world you love…
El Celler de Can Roca – Girona, Spain
Hanging Gardens private dinner – Ubud, Bali
Spice Temple – Melbourne
Your guilty pleasure food. You know you shouldn’t but you always do…
Without any doubt it’s chocolate in all facets.
What is your signature dish?
Fish fingers with mashed potatoes and spinach for my 2.5 years old boy.
If you could have a master-class with a celebrity chef, who’d you pick and why?
Nobuyuki Matsushita because I love his food and his lifestyle.
Dead or alive – 3 famous people you would invite around for dinner…
Elvis, Mozart and Kraftwerk.
A dish you have yet to master…
Labskaus – A traditional mash dish from the north of Germany which is made from corned beef, potatoes, beetroot and herring – topped with a fried egg and a Rollmops (sour pickled herring). Looks like pool of sick and tastes like heaven.
Your favourite pizza topping?
Might sound not very fancy but a Sunday evening after a long weekend finishes best with a pizza topped with tuna, onions and sauce hollandaise.
Your biggest ever food mistake
Asking for pasta with seafood in Corfu.
A dish you just cannot eat
Sea urchin sushi.
You get in from the club pissed, dive in the fridge and usually come out with…?
“Matjes“ with onions, the Hamburg version of young salted herring pickled in oil, might be my choice – the perfect hangover food.
The most expensive meal you have ever had?
Comparable to other dishes my most expensive meal was a flat medium size pizza for almost 50 Euros from an Italian restaurant on the first evening of holidays in Reykjavik, Iceland. Also, a dinner at The Table – generally costs for more than 700 Euros but guess what, it was worth every cent!
Ibiza!!!!!
My favourite restaurants on the island…
Cami de Balàfia
The best sunset spot for a cold drink…
Kasbah Ibiza
A record that always reminds you of Ibiza
This question reminds me of a crazy week in Ibiza after the management of Depeche Mode asked me to do a remix of one of their hits but they wanted me to choose it by myself. Every day I listened to all songs over and over as this was an important milestone for me personally and artistically. It turned out Everything Counts was the right decision by heart.
Your favourite Ibiza dish…
Grilled fresh Dorade with vegetables
The perfect 24 hours in Ibiza would be…
Getting up late, breakfast at Croissant Show…
and from there straight to the marina to catch a boat, preferable a sailing boat. I own a license and as often as I can I hire a boat with friends and family for fun. Cruising along the coast until sunset. Dinner at Cami de Balàfia and either fading the day away with a glass of wine in Vila d’Eivissa or starting with Hierbas for a long night with destination unknown…
