It would have to be dog! I was duped into eating it when I was visiting a small village in the far north of Thailand. It tasted like badly cooked pork and due to my huge love for dogs, it will haunt me till my dying day!

I was self taught as I have lived alone since my teens. That would probably explain why I’m a disaster in the kitchen.

Tough to answer that one as there are so many amazing restaurants here.
I would say probably Fishermans Restuarant in Koh Phangan (check their crab below).

Your favourite Thai dish?
Another really tough one as there as so many dishes out here which I love so much. It would probably be Pad Siew Seng Leung as that’s what I seem to order the most! It’s a stir fried dish with yellow noodles, kale, morning glory, baby sweetcorns and chicken in an oyster sauce.
A DJ that has surprised you with their cooking skills…what did they cook?
Strangley I can only remember two DJs having ever cooked for me!! They are local DJs here in Thailand and good friends of mine, Rob Gritton and Rory Gallagher…Rob cooks a mean Spag Bol…other than that, Jamie Jones made me some awesome mint tea at his villa before, now I’m addicted to it! Not sure if hot liquid counts though?
Your guilty pleasure food. You know you shouldn’t but you always do…
I’m really partial to the cheese and ham toasties they have in 7-11’s out here! They are divine, but you know with every bite they are chipping away at your health with their processed ingredients running riot in your blood stream. Could destroy one right now to be honest!
What is your signature dish
Would have to be Thai green curry as that’s the only thing I can cook without welding it to the pan and poisoning myself…

Chef McDang from Thailand. With his knowledge of the intense flavour combinations found in Thai food along with his superb skills in the kitchen, it would really be interesting.

Tom Yum Goong is the one I always try to cook but can never get those bold flavours correct the way the Thai people do it, always one flavour standing out too much rather than a perfect balance!
