k  Yogi Waldolf salad (optional extra)  k

This is my healthy twist on a classic waldolf salad that would usually be loaded with fattening mayonnaise –  but this is absolutely brimming with super food nutrients.

Black and red grapes are anti-inflammatory, reduce water retention and have strong antioxidant phytochemicals. Their high levels of resveratrol can slow the aging in our cells and protect the DNA by activating a gene that controls our longevity.

Celery contains a healthy balance of sodium and potassium making it a natural diuretic with the power to cool detox and flush your body of excess fluid.

The pumpkin seeds that are full of zinc and amino acid tryptophan than help promote calming serotonin in the body making this a great evening time salad (or go-to snack before bedtime if you are feeling anxious).

And of course the humble apple! Full of quercetin – an anti-cancer, free radical defender and natural antihistamine. They don’t say an apple a day keeps the doctor away for no reason!

Ingredients (serves 2)

Handful sultanas

Handful black seedless grapes – chopped into 1/4

3 sticks celery roughly chopped

1/4 cucumber – chopped

Handful toasted pumpkin seeds

1 red apple – roughly chopped

Handful nuts (walnuts/almonds/pistachio – choice is yours)

The epic dressing

2 teaspoons Dijon mustard

2 tablespoons white wine vinegar (or white balsamic)

1 dessert spoon of tahini

6 tablespoons light olive oil

Salt and pepper to season

Method

1. Put the mustard, vinegar and tahini in bowl and whisk vigorously to mix. Gradually pour in the olive oil, you will see it thicken become viscous. Store in a cool place (not the fridge) until ready to use. Vinaigrette will keep in the fridge for a week.

2. For the salad just simply toss all the ingredients into a bowl and then pour over 1/3 of the dressing (or as much as you like to taste!).
